They’re not as Instagram friendly as their stylish almond counterparts, but these coconut macaroons are so easy to make.
They only contain four ingredients – dessicated coconut, egg whites, sweetened condensed milk and vanilla essence.
The recipe is from the brilliant Hummingbird Bakery book, Home Sweet Home. The whole book is fantastic, but you can find lots of equally simple coconut macaroon recipes online. This free Food Network recipe is almost identical.
You have to be careful not to over bake them so that they don’t become dry. These were just right – perfect to enjoy with a good cuppa!
